Avocado, Tomato and Pumpkin Seed Dressing
I made the following dressing for tonights salad:
- 1 avocado
- 1/2 red pepper
- 4 wild garlic leaves
- 1 sun dreid tomato, soaked
- 1 tomato
- 2 tablespoons flax seeds
- 2 tablespoons pumpkin seeds
- 1/2 tsp ground cumin
- 1/4 tsp nutmeg
- 2.5cm (1inch) piece of lemongrass
Put everything into a blender, including some of the soak water from the tomato and blend.
